Been busy with a lot of things, so had no chance to post anything of late. So I thought, before I stash the pix away and continue to drown in work, I better post something.

Made something today for breakfast, something that I had been craving for for weeks: Belgian Waffles.

I made the batter last nite and let it to rise overnite. The recipe was halved, yet, that took me a little over an hour to cook all of the batter!! I was pooped by the time I was done with the last scoop of batter. I suppose it would take less time if I filled up the entire waffle iron. Since I subbed half the white flour with whole wheat, the waffles came out a little softer… that or I didn’t use as much butter. Still good though. And, healthier! :) This was time-consuming, but well worth the effort. No more waffles from Carrefour for me - too sweet and too pricey for what they are.
